Quick 'n' Easy PFEFFERNUESSE
2/3 cup sugar 1/2 t. cinnamon
1/3 cup lite corn syrup 1/4 t. cardamon
1/2 cup margarine 1/2 t. mace (or nutmeg)
3 eggs 1/4 t. ground cloves
2 cups flour 1/4 t. anise extract
1 1/2 t. baking powder 1/2 t. salt
1/2 t. vanilla 1/4 t. pepper
Cream together sugar, syrup and margarine. Add eggs, vanilla, anise, and dry spices: beat well. Add baking powder and flour and stir until well-mixed. Chill. Drop half-teaspoonsful onto lightly greased cookie sheet. Bake 10-12 minutes in 375 degree oven until lightly browned. Let cool and store in tightly lidded container. Makes about 70 soft peppernuts but they do not keep forever as regular peppernuts do. |
