I've noticed Carol's recipes in the Snooze. I'm not going to try to compete with her, but here's a little something that is better than nothing. :)

There is a time when we are all single. In this time, fast-food was/is probably our mainstay for nourishment. I went through it and it was ok but I often wanted more. Burgers and Pizza only go so far. :)

Here we go:

Chili

Get prepared. If you dont already have it, go to the store and get the following:

1 can - "Ranch Style Beans"
1 half pound hamburger meat
1 small onion
Small container of chili powder
Crackers or Fritos(r) <optional>

In worst case, raid mom... that's what she's there for. :-))

Chop the onion into small pieces.

Now, in a skillet or whatever you have that will cook stuff on a stove, brown the hamburger meat with the onion and chili powder to taste. This isn't that hard, just turn the stove on, put the meat and however much of the onion and chili powder (be easy with the chili powder, a little goes a long way) you think you'll want in the pan and stir with a fork till it's in small bits and not red anymore. Drain the grease off of it into whatever container you have that you will throw away.

Next, open the beans and pour them into the pan with the meat and onion. Get a bigger pan if you need. Fill the can with water about half way and swish it to get the rest of the sauce dissolved. Put that in the pan as well. (just the contents of the can, not the can :)

Now, heat this whole mess up while stirring. You might need to add some water to thin it out a little. If you get too much water, cook it a little while till the water evaporates. Be careful to not burn the stuff by getting the heat too high. Keep it stirred.

You can eat this straight, put it over the "Fritos(r), crackers or however you like.

If it's not good, blame mom for not asking you over for dinner. :)

      Title: Magic Leeks!
 Categories: Appetizers, Diabetic, Low-fat, Vegetables, Xxcarol
      Yield: 6 Servings

      2 ea Whole bunches of leeks
      1 tb Soy sauce (shoyu)
      1 tb Worstershire sauce
           Olive oil, light drizzle
      1 ts Black pepper
      1 ts Salt

Ok, chop them washed leeks up. Get all the dirt out. Now mix the seasonings (sans oil) and put that in a reclosable baggie. Shake'em up and down (or side to side if you prefer). Add a drizzle of olive oil to a pan and either fry them tender, or bake at 350 degrees for 20 mins. Dont let them get cold or the magic leeks out!

Suitable as a side dish to anything that would be complemented by onions. Nice little 'knosh' all by themselves on a late night for a dieter.

      Title: Shrimply Fiesta Feta
 Categories: Seafood, Xxcarol, Main dish
      Yield: 6 Servings

      1 bn Watercress
      2 c  Orange slices
     36 ea Shrimp,deveined shelled cook
  1 1/2 c  Thin sliced red onion
      3 ea Hard boiled eggs, quartered
    3/4 c  Crumbled feta cheese
      1 tb Dijon mustard
    1/4 c  Fresh coriander leaves
      3 tb Lemon juice
      2 tb Red wine vinigar
      6 tb Olive oil

Put the watercress about the plate, then arrange alternating orange slices and shrimp. Put the onions over the plate and then the cooked eggs. Sprinkle with feta and coriander leaves. Mix the rest in a shaker and pour over salad before serving. A dash of tabasco on top makes it perfect!

This is a spicy dish and best served for lunch, with a mild soup starter such as corn/squash chowder and some old fashioned cold or hot tea.
